Epic Nasi Goreng

Here’s a Nasi Goreng recipe I picked up from a surf trip to Indonesia, staying with a lovely family near Uluwatu. They would make the dish with dried fish due to their economic situation and what they were able to get hold of on the Island.Nasi Goreng is an Indonesian comfort food thats a staple at most family homes. It just so happens its delicious and a well balanced meal!

This is my adaptation. I’ve tried to keep the flavour but balance the macros somewhat for the fitness enthusiasts.

Ingredients

1 tbsp mild olive oil

1 tsp sesame oil

1 onion chopped

2 garlic cloves chopped

1 tsp ground ginger

1 tsp turmeric

1 tsp cumin

2 chicken breast diced

250g basmati rice uncooked

2 tsp soy sauce

2 tsp fish sauce

1 shredded carrot

1 Handful shredded green beans

1 tbsp fresh coriander chopped

2 spring onions sliced

2 eggs

1/4 cup peanuts

1/2 lime juice

Instructions

 Heat both oils in a large frying pan and cook the chopped onion over medium heat for 5 minutes, add garlic and continue cooking for 1 minute longer.

Add ground ginger, turmeric and cumin and cook stirring for another minute. Remove and leave to cool.

Add chicken breast and cook for 5 minutes until all pieces browned and cooked through.

Whilst the chicken is cooking add your onions, garlic and spices to a blender with your soy, fish sauce and the stems of the coriander setting the leaves aside for garnish. Blend to a paste.

Now add cooked rice to the pan together with your chicken and paste start stirring to coat rice with paste

Add your vegetables, you can use anything you like beans, peas, broccoli, whatever!

Stir-fry for 2-3 minutes.

Meanwhile fry eggs on a separate pan on medium heat; try tilting the pan to the side so the oil pools and use a spoon to drag some of the hot oil on to of the egg white to get a great looking egg…that’s important for the food selfie and insta-fame.

To garnish squeeze the juice of 1/2 lime all over it, sprinkle with sliced spring onions, chopped coriander, peanuts and finally add your fried egg.
